Bar Manager – Job Description

TITLE : BAR MANAGER

REPORTING TO : GENERAL MANAGER

EXECUTIVE ASSISTANT MANAGER (EAM)

SCOPE & GENERAL PURPOSE OF JOB:

•  To direct, control and organize all staff, within your direct span of control, including the Assistant Bar Manager, ensuring customer requirements are satisfied.

•  To assume overall responsibility for the running of the Bar.

•  To attend weekly F&B meetings

•  To carry out duty Management shifts as required.

•  To maintain an open and accurate channel of communication with the entire Management Team.

•  To implement, control & review all procedures relating to stock control, cash handling, purchasing and stock and waste disposal as relevant to the bar.

 

DUTIES AND RESPONSIBILITIES

Quality of Service : To satisfy all customer requirements by ensuring that the service is constantly maintained at a consistently high standard with particular focus on regular clientele in the public bar.

Productivity : To maintain and/or implement new efficient and effective work methods and systems.

To prepare and issue, according to bar practice, staff rotas which will provide adequate cover in the most effective manner.

To carry out ordering of supplies as and when necessary.

To carry out accurate cash-up procedures at end of the night.

To liase with HODs of kitchen and other departments regarding procedures, services, etc.

To be informed and aware of all relevant legislation regarding service of liquor, the sale of tobacco, opening hours, etc.

To be responsible for ensuring that security procedures are adhered to throughout the hotel.

To communicate regularly and efficiently with Assistant Bar manager and HODs

To constantly strive to improve the standards of hygiene and service throughout the bar.

 

Cost Control : To practice economy and to minimize any incorrect usage of any resources with particular attention given to achieving G.P% / Labor % and minimizing variable expenses.

To regularly price check all beverage items bought for the operation, to ensure that we are buying at the best prices available.

To ensure all deliveries are checked in correctly and that all relevant delivery dockets / invoices are correct.

To ensure that all services delivered within the bar operation are being charged for correctly

To continually monitor three beverage stock items per week, and communicate any shortages to the General Manager

Supervision : To hold regular departmental meetings.

To direct, control and organize the assistant bar manager and all staff within your direct span of control and to ensure that the required standards are achieved and maintained.

To advise staff of unavailability, composition of dishes, information relation to drinks, wines, etc., and any other relevant information in order to ensure the efficient operation of the Bar.

To set good example for the staff with regards to punctuality, attendance, attitude and hygiene

To liase with the Human Resources manager regarding recruitment needs, and to carry out interviews as required

To train new staff in methods and procedures.

To implement Grievance and Disciplinary procedures where necessary, and report all serious breaches of discipline to Executive Assistant Manager (EAM), General Manager

To promote and practice relevant health and safety and fire safety standards

To provide induction training for new staff, and complete Skills Checklist within their first month of employment

To assess training needs and provide relevant training

 

Hygiene : To practice high standards of personal hygiene at all times in terms of grooming and uniform.

To maintain the required standards of operational hygiene according to the cleaning rotas at all times

To display total loyalty to the management of the Hotel in the day- to-day performance of your role

Interpersonal Skills : To maintain harmonious working relationship between yourself, your assistant, staff and customers.

To provide all staff with a thorough understanding of their jobs and standards of performance and to clarify duties and responsibilities

To communicate a positive attitude, sincere interest, and to interact in a positive way with management and staff alike

Waitress - Job Description

TITLE : WAITRESS

REPORTING TO : BAR MANAGER

Waitress Duties and Responsibilities

•  Check patrons' identification in order to ensure that they meet minimum age requirements for consumption of alcoholic beverages.
Collect payments from customers.

•  Write patrons' food orders on order slips, memorize orders, or enter orders into computers for transmittal to kitchen staff.

•  Take orders from patrons for food or beverages.

•  Check with customers to ensure that they are enjoying their meals and take action to correct any problems.

•  Serve food and/or beverages to patrons; prepare and serve specialty dishes at tables as required.

•  Prepare checks that itemize and total meal costs and sales taxes.

•  Remove dishes and glasses from tables or counters, and take them to kitchen for cleaning.

•  Present menus to patrons and answer questions about menu items, making recommendations upon request.

•  Inform customers of daily specials.

•  Clean tables and/or counters after patrons have finished dining.

•  Prepare hot, cold, and mixed drinks for patrons, and chill bottles of wine.

•  Explain how various menu items are prepared, describing ingredients and cooking methods.

•  Prepare tables for meals, including setting up items such as linens, silverware, and glassware.

•  Perform food preparation duties such as preparing salads, appetizers, and cold dishes, portioning desserts, and brewing coffee.

•  Fill salt, pepper, sugar, cream, condiment, and napkin containers.

•  Escort customers to their tables.

•  Describe and recommend wines to customers.

•  Bring wine selections to tables with appropriate glasses, and pour the wines for customers.

WAITER/WAITRESS
Job Description

Serves meals to patrons according to established rules of etiquette, working in formal setting: Presents menu to diner, suggesting dinner courses, appropriate wines, and answering questions regarding food preparation.

Writes order on check or memorizes it. Relays order to kitchen and serves courses from kitchen and service bars. Garnishes and decorates dishes preparatory to serving. Serves patrons from chafing dish at table. Observes diners to respond to any additional requests and to determine when meal has been completed. Totals bill and accepts payment or refers patron to CASHIER. May carve meats, bone fish and fowl, and prepare flaming dishes and desserts at patron's table. May be designated Waiter/Waitress, Banquet (hotel & rest.) when serving at banquets.

TITLE : HOSTESS

REPORTING TO : BAR MANAGER

Job description for hostess begins with a formal dress. To be a professional hostess, you must have the right attire.; the important thing here is you should look neat and sharp. Wear minimum jewelry and don't apply too much perfume. Your hair should be neat, clean and tied. A hostess/host is a brand ambassador of an establishment, so make sure your first impression should be a good one.

Hostess Duties and Responsibilities
The hostess job description includes keeping the desk organized and clean at all times.

•  Make sure all menus of the hotel are wiped and stain free.

•  Check with housekeeping and ensure that doors are clean and stain free.

•  Check with the telephone operator and answering machine to have an idea of all the advanced reservations.

•  Confirm with the manager about the parties and events that are going to be held in the hotel.

•  Plan out the guest seating list and the reservations.

•  Have a note of all the supplies in the kitchen.

•  Give a warm welcome to the guests, escort them to their tables, pull out the chairs for the ladies and present menus.

•  Make sure that the guests have been seated at their respective tables.

•  Make sure you interact with the guest while taking an order. Give and accept creative suggestions regarding the food menu; make the conversation with the guests lively.

•  Make sure that the hotel lobby, dining room, bathrooms and menus are kept clean throughout hotel operations.

•  Say a warm good-bye to the guests. Have a check with every guest to see if everything was wonderful. Give them a comment card and ask them for their valuable feedback regarding the hotel.

RECEPTIONIST - Job Description

REPORTING TO : FRONT OFFICE MANAGER

To provide and efficient reception service, whilst ensuring all guests are dealt with in a hospitable and courteous manner.

PRIMARY RESPONSIBILITIES

 

1) To welcome and register guests in a hospitable and efficient manner.

2) Assist guests with queries.

3) Sell hotel services as appropriate to generate increased revenue.

4) Ensure security of cash and safe deposits, keys and floats.

5) Taking messages for management and guests efficiently.

6) Checking guests out, handling credit cards, ledger payments, cheques and cash according to laid down procedures.

7) To balance all payment methods and floats with daily banking before going off shift.

8) Ensure reception area/foyer and back office is kept clean and tidy

9) Provide an efficient handover.

10) Ensure regular guest information is kept up to date.

11) Report guest feedback to relevant personnel.

12) Abide by relevant fire and health and safety procedures.

13) Carry out guests business requests, i.e. faxing, photocopying.

14) Assist reservations as requested.

15)  Assist the night shift as requested.

16) Ensure daily Guest Comment card quota is achieved.
